PISTACHIO SALAD aka Watergate Salad, is a concoction thought up by a sous chef at the Watergate Hotel, and it was then served at brunch on most weekends. Watergate Salad took off in popularity during and after the presidential scandal which shares the same name. Primarily made from pistachio pudding, canned pineapple, Cool Whip, and marshmallows, it is very quick to prepare, the ingredients are combined and can be chilled, if desired.
1 (3 1/2 oz.) pkg. INSTANT Pistachio pudding mix
1 (20 oz.) can CRUSHED Pineapples, undrained
1 – 2 cups miniature Marshmallows
1/2 cup toasted Walnuts, chopped
2 cups Cool Whip®, thawed
VARIATION: 1 (8 oz.) pkg. Cream cheese, softened
In a large bowl, combine the package of pudding and the undrained pineapples, stir well to combine and dissolve the pudding mix. IF you are using the softened cream cheese, use a mixer to combine it with the pudding and undrained pineapples, until creamy. The picture below DOES NOT include the cream cheese.
Next, add in the marshmallows and chopped walnuts. Stir to incorporate the ingredients well.
Now, gently fold in the thawed Cool Whip® and combine well. If you’d like a more bolder color, add in a few drop of green food coloring and stir to combine well. Place into a serving bowl, cover and refrigerate until ready to serve.
