Easy Cranberry and Pistachio Christmas Fudge

When I say EASY, I really mean it!  This showstopping recipe will WOW your family and friends.  It’s total indulgence in a 1-inch square.  White chocolate, dried cranberries, and pistachios?  What’s not to love?  With it’s PERFECT colors of the holidays, this recipe should be part of your tradition year after year.


Serving suggestion….


3 cups White chocolate chips
1 (14 oz.) can Sweetened condensed milk
1 tsp. Vanilla paste or extract
1 1/4 cup dried Cranberries, chopped
1 1/4 cup salted Pistachios, chopped


Lightly butter an 8- or 9-inch baking dish.  A glass dish is also perfect for this recipe, set this aside.











You will need a double boiler for this recipe. If you do not have a double boiler, you can improvise by using a saucepan of water and a large glass bowl. Heat the water to a boiling then reduce to simmer, about MEDIUM heat. Pour the white chips and condensed milk into the bowl and place the bowl over the hot water, DO NOT ALLOW THE BOWL TO TOUCH THE WATER!












Stir chocolate and make sure to combine well with the condensed milk.











Continue to stir until the chocolate has COMPLETELY melted.  Keep the bowl over top of the simmering water as we continue with the recipe.  Add the vanilla and stir well to combine.











*NOTE:  I found that when I was chopping the pistachios in my food processor, a lot of “pistachio powder” was mixed throughout the pistachios; I didn’t want this in my fudge.  So what I did was I poured the chopped pistachios into a sieve and shook it until I got rid of most of the powdery part.  Add the 1 cup cranberries and 1 cup pistachio nuts.  The 1/4 cup of each is reserved to garnish on top.











Stir the pistachios and cranberries well to combine with the chocolate mixture.











Remove the bowl from the simmering water and pour the fudge mixture into the prepared pan and spread evenly.  Using the reserved 1/4 cups of each pistachio and cranberries, sprinkle over the top of the fudge.  Place this into the refrigerator until ready to serve.











When ready to serve, using a sharp knife, slice the fudge into 1-inch squares.  Place them into decorative cupcake liners to serve or pile them on top of each other on a decorative plate.
