What a wet rainy day we’re having here in the Queen’s city, and what would go great with a day like this? CHILI! In fact, how about a side of cornbread too? You got it! Here’s a tried and true chili recipe that I love using. Make sure to pair it up with some good cornbread, here’s the recipe I use…..
1 lb. Ground beef OR Ground turkey
2 Onions, diced
1 Tbsp. Garlic powder
1 Green bell pepper, diced
1 tablespoon Jalapeno, finely chopped
1 (14 oz.) can Mexican-style tomatoes (I used Rotel)
2 (8 oz.) cans Tomato sauce
2 Tbsp. Cumin
2 Tbsp. Chili powder
1 tsp. Salt
1/2 tsp. Cayenne pepper
1/2 tsp. Paprika OR smoked Paprika
1 tsp. Accent seasoning
1 cup Water
1 (14 oz.) can Kidney beans, drained and rinsed
1 (14 oz.) can Black beans, drained and rinsed
1 Tbsp. Masa Harina flour
2-3 Tbsp. Water
In a large pot, brown the ground meat with the onions and peppers. Drain off the excess grease, add tomatoes, the seasonings, and the water. Bring this to a boil. Add beans, reduce heat to medium low or low and cover. Simmer for about 1 1/2 to 2 hours, stirring often in between cooking time.
During the last hour, make a slurry with the Masa harina and water. Mix this until smooth and add it into the simmering chili; stir well to combine.
