I LOVE QUICK BREADS! I buy bananas and purposely allow them to over ripen just so I can make a batch of banana bread……
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter
3/4 cup brown sugar
2 large eggs, beaten
2 tsp. Vanilla extract
About 4 -5 large, overly ripe bananas, mashed
1/2 cup walnuts, optional (I prefer not to add)
Preheat the oven to 350 degrees. Lightly grease a 9 x 5-inch loaf pan. In large bowl, combine flour, baking soda and salt; set aside.
In a separate bowl, cream together the butter and brown sugar. Mix in the eggs and mashed bananas just until well blended. Whisk the banana mixture into flour mixture; just until it’s well combined. Pour the batter into the prepared loaf pan.
Bake in preheated oven for about 1 hour, but start checking it at 50-55 minutes OR until a toothpick inserted into center comes out clean. Allow the bread to cool in pan for about 10 minutes before removing from the pan onto a cooling rack. Cool completely, slice and serve.
