Okra flower with many pods…..

As many of you know, I have a garden that’s been very “fruitful”, one of those being Okra!  I decided to make some fried Okra tonight for dinner and this is what I came up with…..

Fried Okra

Fresh Okra, 2 – 3 in. long
Buttermilk
1 1/2 cups Self-rising Flour
1 1/2 cups Self-rising Corn Meal
1 1/2 tsp. Salt
1/2 tsp. Cayenne Pepper
1/4 cup Bacon Grease
Vegetable Oil

Wash the fresh okra; trim off and discard stem ends from each okra; leave whole. Place into a deep bowl and pour enough buttermilk to cover okra completely; cover and chill at least 20 minutes. Combine the flour, cornmeal, salt, and cayenne pepper in a large bowl and set aside.

Drain the buttermilk from the okra by pouring into a colander. Discard buttermilk. Add the drained okra into the flour mixture, and toss to coat completely.

Pour enough oil to the depth of 2-inches into cast-iron skillet or deep fry pan; add the bacon grease. When the oil is hot, fry the okra in batches, 5 – 8 minutes or until golden; drain on paper towels. Serve immediately.

NOTE: The best Okra for this dish are those which are 2 -3 inches in length. Okra more than 3-inches should be sliced into 1/4 inch circles.
