Yet, here is another cookie recipe in preparation for holiday baking. Chewy chocolate chip cookies studded with dried cranberries; this is a real holiday treat…..
1/2 cup granulated sugar
1 cup brown sugar, firmly packed
1 cup butter, softened
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2 eggs, beaten
2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup white chocolate chips
1/2 cup semi-sweet chocolate chips
3/4 – 1 cup dried cranberries
Blend together butter, sugars, and extracts until creamy. Mix in 2 beaten eggs. Gradually add flour, baking soda, and salt. Mix well.
Stir in all the chocolate chips and cranberries.Refrigerate cookie dough for about 30 minutes, this helps to prevent them from spreading too much.
Preheat oven to 350 degrees. Drop dough by rounded tablespoonfuls, 2″ apart onto ungreased or parchment paper lined baking sheets. Bake 10-12 minutes or until golden brown. Cool slightly, then remove to cool completely on wire racks.
Makes about 3-4 dozen cookies.
NOTE: You can also add 1 cup of White chocolate chips and leave out the semi-sweet chocolate chips. Adding nuts is also another variation.
